The wine exhibits aromas of blackberry, boysenberry and spiced plum coupled with dark cocoa and vanilla pod - there's a light spiciness in the background. The wine has a plush entry onto the palate and a seamless flow finishing with supple yet supportive tannins.
A wine that is a harmonious blend of ripe fruit with characters enhanced by skilfully-applied winemaking techniques. On the nose, the wine has lifted floral notes, overlying a delicious blackcurrant and plum character with spicy/vanilla elements derived from maturation in new oak.
Mamre Brook is the name of the original homestead built in 1844 on Saltram Estate, near Angaston in the Barossa. The Cabernet Sauvignon for this wine was sourced from low yielding mature vineyards in the Barossa.Individual parcels of fruit were crushed and destemmed and then fermented on skins for up to 10 days. During fermentation the wines developed intense colour and fine, silky tannins. The wines were then matured in oak for 22 months before final blending and bottling.

Fruit was crushed and de-stemmed before fermentation on skins took place in a variety of different fermenters. Fermentation developed intense colour and extracted soft tannins from the skins. The wine was matured in seasoned and new French and American oak barrels for twenty two months. Individual vineyard parcels were kept separate throughout the winemaking process and blended just prior to bottling.
