    Elephant Hill CO Pinot Noir 750ml

    Sourced from two vineyards in the Tarras and Alexandra regions of Central Otago, the 2011 Pinot Noir typifies the elegance and complexity we strive for. A combination of clones were used in blending to showcase the broad flavour spectrum of Central Otago Pinot Noir. Fermentation took place in traditional open top wooden cuves. Following pressing, the wine spent 10 months maturing in oak, of which 25% were new Burgundian oak. Flavours of black cherry and subtle strawberry undertones are perfectly well balanced with the soft tannins and notes of bay leaf and spice.
